This was so delicious! And it is a really great way to use our Baby Greens.
- 2oz Baby Greens
- 3 pears
- 1 block of feta cheese
- 8 eggs
- hand full of cherry tomatoes
- Rosemary
- Cayenne
- Garlic (2-3 cloves)
- 2 shallots
- 1/2 cup milk
- Salt and Pepper to taste
Grease a 9inch baking pan and preheat oven to 375
2oz of Baby Greens (ours are Tatsoi and Toyko Bekana ) sautéed with garlic, shallots and olive oil.
Drain water and put greens in baking pan
Slice 3 pears— layer the pear slices with 1/2 block of feta cheese, salt & pepper, and fresh rosemary
8 eggs – 1/2 cup of milk, salt, pepper, cayenne- whisk and pour on top pear mixture
Arrange remaining feta cherry tomatoes and rosemary on top
bake 375 — for approximately 45 minutes— let stand at least 10 minutes before serving
